Seared, Juicy, and Delicious

Walking through the artisan and vintage booths in the Starbuck City Park this weekend, you’ll smell brats, burgers, and dogs coming from a favorite food vendor: Delicious. Amy and Jim Massmann of Glenwood will be bringing their smashed burgers, chicken Alfredo brats, and signature philly cheesesteak brat to the Market.

“A smash burger is unlike a traditional burger in that it’s loosely rolled then pressed down quickly once it’s on a very hot grill,” says Amy. “The pressing process, combined with the high heat, sears the meat and locks in the burger’s natural moisture and fats, so you get a very delicious burger. Traditional burgers are compacted before they get on the grill and often the juices will run out, leaving a dry patty on a dry bun.” The Massmanns cook on a flat grill, complementing the process. “It’s called the Maillard reaction,” Amy says, of the smash process. “You get a really nice sear on the top and bottom and a sort of cooked seal around the edge.”

In addition to their main courses, the Delicious stand will also feature fried Coke onions, alongside traditional burger toppings. “The onions are fried in Coke, just like it sounds,” Amy laughs, “and the flavor is unbelievably delicious on top of a burger or brat.” Amy and Jim like to shop local, sourcing their meat products from Minnewaska Meats and Kadejan Market. “We’re very invested in only using quality ingredients,” says Amy. “From Barnyard Cheese to local meats, we want our food to taste the best because it’s made from the best.”
