Tacos, Burritos, and the Spice of Life
Mi Mexico will be bringing their food truck—bursting with meat, cheese, tortillas, and fixings—to the Starbuck Vintage & Artisan Market for the first time this year. “Our menu is designed for walking and eating,” laughs Juan Cid. You’ll find street tacos, traditional soft shell tacos, burritos, and the ever-popular nachos supreme on the menu.
New on the menu this year is a Quesabirria, a combination of a quesadilla and a birria taco. The slow-cooked, shredded meat is encased in a corn tortilla and topped with melted cheese, onions, cilantro, and their homemade sauce. “Sometimes people aren’t too sure about trying it,” says Juan. “I always say ‘If you love beef and melted cheese, you’ll love the quesabirria.’ After the first bite, most people have a new favorite.”
The family-owned business opened their first restaurant in Benson in 2007, followed by a restaurant in Morris in 2014. “Eventually we started doing festivals and county fairs from a tent,” says Juan, “then bought our first truck a few years ago. Now we have three trucks and they’re going all over Minnesota whenever the weather is warm enough for folks to be outside.”

The 4th Annual Starbuck Vintage & Artisan Market will be held on the shores of Lake Minnewaska in Starbuck’s City Park. Find artisans, vintage merchants, and food vendors on Friday, August 1st from 4-8 PM and Saturday, August 2nd from 9 AM-4 PM with the Lake Minnewaska Classic Car Show on Saturday from 10 AM-2 PM.
